Food trucks can do some amazing things these days. Owners can hop on board and bring the food to the customer with a select menu that puts the focus on quality over quantity. And they can do so with much lower overhead than a traditional restaurant incurs. But saving money isn’t the reason Nikki Brule and Lisa Piluschak got into being food truckers in 2013.

“We are both vegetarian and we met during yoga teacher training in 2011," Nikki says. “We would share our homemade healthy concoctions and swap recipes and talk about food. I’ve grown up around wonderful food, because my mom is a brilliant cook, and I’ve worked in restaurants all my life. For me, it was a natural fit because I love serving people and I love great food. But the food truck was all Lisa’s idea; she wanted to make vegetarian food more popular by making it more accessible to people.”

While there are some vegetarian and vegan dining options around Calgary, very few are mobile. That's where Nikki and Lisa's Yummi Yogi truck comes in. “There are some great places," says Nikki, "but not enough. So we felt that Calgary was really lacking and we partnered up to fill that void.”
